Ingredients:
**Stir-fry**
- 1/4 cup of peanuts
- 1 cup of potatoes
- 1 cup of celery
- 1 cup of carrots
- 1 (10-ounce) can of Fri-Chik or 1 package firm tofu
**Teriyaki Sauce**
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 3 tablespoons water
- 1 tablespoon cornstarch
Directions:
- Mix cornstarch and water together
- Add cornstarch mixture to soy sauce and mix well
- Add sugar to soy sauce mixture and mix well
- Chop up vegetables
- Chop up Fri-Chik (tofu is definitely a healthier alternative) into small one-inch chunks
- Add olive oil to pan and stir-fry vegetables over medium-high heat
- Add Fri-Chik (tofu tastes better than Fri-Chik)
- Add Teriyaki sauce
- Serve hot over a bed of rice
