Special equipment:

Classic cheesecake ingredients:
- 2 packages of cream cheese
- ½ cup sugar
- 3 tablespoonsful flour
- 2 eggs
- 1 tsp lemon zest
- ¼ cup heavy whipping cream
- 1 tsp vanilla extract
- 1 pie crust
Directions:
- In a bowl, add the cream cheese, flour, and sugar together
- Mix together using a handheld blender until just blended
- Add one egg, mix, then add the other egg, and mix until just incorporated
- Add the vanilla extract and lemon zest
- Add the heavy whipping cream and mix a little more
- Do not over-mix the batter or the surface of the cheesecake may crack after baking
- Pour onto a pie crust
- Bake 350 degrees for ½ hour then turn off oven and let cool for another hour
- Chill in refrigerator until serving
Tofu cheesecake ingredients:
- 1 block tofu
- 1 (8-ounce) package soy cream cheese
- ½ cup sugar (385 calories)
- 1 tablespoonful vanilla extract
- 1 pie crust
Directions:
- Mix all ingredients in a bowl then transfer to a blender
- Blend until smooth
- Pour onto a pie crust and bake for 350 degrees for 35-40 minutes
- Let cool for an hour
- Refrigerate until ready to serve
