Ingredients for pie crust:
- 2 cups flour
- 1/2 cup olive oil
- 1/4 cup wheat germ
- 1 tablespoonful salt
- 1 cup hot water
Ingredients for filling:
- 1 cup broccoli, chopped
- 1 cup carrots, chopped
- 1 cup mushrooms, sliced
- 1-2 cloves garlic, minced
- 1 can tomato paste
- 1 tablespoonful Worchestershire sauce
- 1 large can vegetable broth
- corn starch
Ingredients for topping:
- 4-6 potatoes, skinned and boiled
- 2 cups almond milk
- 5 tablespoonsful Chik’N style seasoning
Chick’N style seasoning ingredients:
- 1 1/3 cups nutritional yeast flakes
- 3 tsps onion powder
- 2 1/4 tsps garlic powder
- 3 tsps Italian seasoning (may substitute 1 1/2 tsps oregano + 1 1/2 tsps basil)
- 2 tsps dried parsley
Directions for Chick’N style seasoning
- Blend all the ingredients for chick’N style seasoning in a blender except for the parsley until you get a fine powder
- Add parsley to powder mixture
- Mix well and set aside
Directions to make pie crust:
- Add flour and salt to bowl
- Mix well
- Add olive oil and water at the same time
- Mix until you get a dough
- Get two piece of parchment
- Get a ball of dough and place on a sheet of parchment paper
- Put another piece of parchment paper on top
- Use a rolling pin and knead the dough until you get a very thin layer
- Layer the dough over a pie tin and set aside
Directions for filling:
- Stir-fry carrots, broccoli, and mushrooms in a wok or large pan
- Add in garlic
- Add in 3 spoonfuls of tomato paste
- Add in vegetable broth
- Add corn starch to thicken sauce
- Simmer for 10 more minutes then set aside
Directions for topping:
- Add potatoes to a pot and mash
- Slowly add in almond milk and mash some more
- Add Chik’N style seasoning and mix around
Directions to make pie:
- Add vegetable mixture to pie crust
- Spoon a thin layer of potato topping over pie
- Use a fork to make track lines on the topping
- Broil the pie in the oven until the topping is golden brown
