Ingredients:
- 3 cups pancake mix
- 1 & 1/2 cups soy milk
- 1 tbsp ground flaxseed
- 1/2 tsp salt
- 1/2 cup sugar
- 3 tbsp oil
- 1 cup berries of your choice
Directions:
- Add pancake mix, soy milk, flaxseed, sugar, and oil to a bowl
- Mix well to get a thick mixture
- Add more pancake mix or soy milk as needed to get desired consistency
- Fold in the berries and mix well
- Pour mixture into an oiled baking dish
- Bake at 400 degrees for 15 minutes or golden brown
- Serve hot with your favorite berries
