*Note that recipe is from an authentic mom, so unfortunately we do not have exact measurements!*
Ingredients:
- 1 large pot of water
- Carrots
- Chayote
- Daikon
- Cabbage
- Apples (for sweetness
- Pineapples (for sweetness)
- Nappa cabbage (this is different from regular cabbage)
- A little bit of celery (not too much)
- A little bit of salt
- A little bit of rock candy (not too much)
- A llittle bit of natural mushroom seasoning
- Mushrooms
- Bean sprouts
- Noodles
Directions:
- Skin the carrots
- Bring the large pot of water to a boil
- Add in all the fruit and vegetables and a little bit of salt
- Reduce the heat to a simmer
- Simmer for at least 2-3 hours
- Strain the broth and throw away all the vegetables
- If more sweetness desired, add a little bit of rock candy to the broth
- If more flavor desired, add a little bit of natural mushroom seasoning
- Prepare desired noodles by dipping them briefly in boiling water
- Put noodles in a bowl
- Add mushrooms, bean sprouts, and any other desired vegetables
- Add any extras like green onions, fried scallions, or a little bit of sesame oil
- Ladle the broth into the bowl and serve hot.
