Ingredients:
- 1 cup ground nuts (e.g. walnuts)
- 3 cups quick oats
- 30 ounces red beans, drained
- 2 cups tomatoes, chopped
- 1 cup onions, chopped
- 1 tablespoonful brown sugar
- 3 tablespoonsful olive oil
- 1 cup ground cereal of your choice
- Dash ground pepper
Directions:
- Blend beans until you get a puree
- Pour bean puree into a large bowl
- Mix in the quick oats
- Add the nuts, tomatoes, and onions then mix well
- Add the brown sugar and mix well
- Add the ground cereal and mix well
- Add the olive oil and mix well
- Add a dash of ground pepper
- Set bean mixture aside for 5-10 minutes to thicken
- May add more quick oats as needed to thicken mixture
- Roll a spoonful of bean mixture into a ball shape and put on parchment paper
- Bake 10-15 minutes at 350 degrees, turning the meatballs halfway through
- Serve hot with your favorite sauce (e.g. BBQ sauce)
