Ingredients:
- 1 can of vegetable broth
- 1 potato, peeled and chopped
- 1/2 cup sliced mushrooms
- 1/2 cup squash, chopped
- 1 cup pureed or mashed carrots
- 3 tablespoons Indian curry powder
- 1/2 block of curry, chopped into cubes
Directions:
- Pour vegetable broth into a pot and bring it to a boil
- Add curry powder
- Mix well and reduce heat to a simmer
- Add carrots and mix well
- Add potatoes
- Put the lid on and simmer for 20 minutes
- Add the squash
- Put the lid back on and simmer for 15 more minutes
- Add the mushrooms
- Add the tofu
- Mix well and simmer for 5 more minutes
- Serve with bread or over a bowl of rice
