Ingredients:
- 2 tablespoons vegan butter
- 3/4 cup lemon juice
- 1 & 1/2 cups sliced mushrooms
- 2 shallots, minced
- Some parsley
- One cauliflower head
- Olive oil
- 3 tablespoons of capers
- Pepper to taste
Directions:
- Place the cauliflower on a cutting board
- Slice the cauliflower like a loaf of bread, making 1/2 inch thick slices
- Place the cauliflower slices on a baking dish that is lined with aluminum foil
- Drizzle olive oil over the cauliflower
- Sprinkle a little pepper over the cauliflower
- Put the cauliflower slices into an oven and bake at 425 degrees for about 15-20 minutes, until the cauliflower is tender
- Melt the butter in a pan over low heat
- Add the shallots
- Add the lemon juice
- Add the capers
- Add the mushrooms
- Simmer and stir occasionally until the sauce thickens a little
- Put a cauliflower slice on a plate and spoon the sauce over it
- Top with some parsley and serve
