Ingredients:
- 3 cups cauliflower
- 3 cloves of garlic, minced
- 2 tablespoons vegan butter
Special equipment:
- Blender
Directions:
- Bring a pot of water to a boil and add the cauliflower
- Let the cauliflower boil for about 8 to 10 minutes
- Remove the cauliflower and put it in a blender
- Do not dump the water used for boiling the cauliflower!
- Add about a cup of the water from the pot to the blender
- Blend until smooth
- You can add 1/2 cup carrots to the blender to get a more orangy color, if you wish
- Melt the butter over low heat
- Add the garlic
- Saute the garlic for a couple minutes until the garlic is golden
- Add the garlic to the cauliflower sauce and stir well
- Serve over the pasta of your choice
