Ingredients:
- 2 cups flour
- ½ cup sugar
- ½ cup applesauce
- 1 cup vanilla almond milk
- 2 tablespoons olive oil
- 2 teaspoons vanilla extract
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon cinnamon
- ¼ teaspoon nutmeg
- 1 cup blueberries
- Vegetable oil (if frying donuts)
Directions for baked donuts:
- In a large mixing bowl, add the olive oil, almond milk, applesauce, and vanilla extract together and mix well
- Add sugar and stir until sugar is completely dissolved
- Add baking soda, baking powder, cinnamon, and nutmeg and continue stirring
- Add the flour and stir until completely mixed
- Grease a muffin tray and spoon the mixture into the muffin tray
- Bake at 350 degrees for 10-15 minutes
Directions for fried donuts:
- In a large mixing bowl, add the olive oil, almond milk, applesauce, and vanilla extract together and mix well
- Add sugar and stir until sugar is completely dissolved
- Add baking soda, baking powder, cinnamon, and nutmeg and continue stirring
- Add the flour and stir until completely mixed
- Add more flour and stir until you get a soft dough
- Knead the dough and make into small rings that can fit inside the palm of your hand
- Deep fry the donuts in vegetable oil over low-medium heat
