Ingredients:
- 1/2 onion, chopped
- 1/2 cup carrots, chopped
- 1/2 cup peas
- 3 cups cooked rice (white or brown)
- 1 cup firm tofu, chopped into cubes
- 2 cloves garlic, diced
- 1 tablespoon soy sauce
- Olive oil
- Green onions, diced as a garnish
Directions:
- Stir-fry onions until tender
- Add carrots and stir-fry until tender
- Add peas
- Add rice
- Add garlic
- Add soy sauce
- Stir-fry until well-mixed then serve
