Ingredients:
- 3 cups broccoli
- 2 potatoes, peeled and chopped
- 1/4 cup nutritional yeast flakes
- 1/2 onion, diced
- 1 celery stalk, chopped
- 1 cup rice milk
- 2 cloves garlic diced
- 4 cups water
Directions:
- Stiry-fry onions until they start to get tender
- Add the garlic and stir-fry for another minute
- Add the potatoes
- Add the water
- Simmer for 10-15 minutes
- Add the broccoli
- Continue cooking for about 3 more minutes
- Transfer everything to the blender
- Add rice milk to the blender
- Make sure top of blender is slightly open to allow for steam to escape during blending
- Blend until smooth
- Transfer soup to a pot
- Add nutritional yeast flakes and mix well
- (Add more rice milk if soup is too thick)
- Simmer for a few more minutes
- Add nutmeg or pepper to taste if desired then serve
