Ingredients:
- 1 teaspoon crushed coriander
- Olive oil
- ½ a medium onion, chopped
- 2 teaspoons garam masala
- 1 teaspoon cumin
- 1 teaspoon curry powder
- 1 teaspoon paprika
- 1 & ½ cups of pureed tomatoes
- ½ can of coconut milk
- 1 cup of chickpeas
- 1 cup of sweet potatoes, peeled and chopped
Directions:
- Stir fry the crushed coriander in olive oil over low to medium heat
- Add the onions and stir fry until they begin to become tender
- Add some olive oil to one part of the pan then add the garam masala, cumin, curry powder, and paprika
- Add the tomato puree and mix well
- Add the coconut milk
- Add the chickpeas
- Add the sweet potatoes
- Simmer for 10-15 minutes
- Serve with some naan and top with cilantro
