Traditional Ingredients:
- Fritos chips or tortilla chips
- Refried or black beans
- Diced tomatoes
- Lettuce
- Shredded cheddar cheese
- Diced onions
- Sliced olives
- Salsa
- Guacamole
Adventasty-style ingredients:
- 1/2 cup quinoa
- 1 cup uncooked rice
- 2 cups vegetable broth
- 1 cup sweet corn
- 4 garlic cloves minced
- Shredded Mexican-blend cheese
Directions to make quinoa-rice mixture:
- Pour 1 cup of water into a pot and bring to a boil
- Add quinoa
- Stir well and reduce heat to a simmer
- Pour vegetable broth into another pot and bring to a boil
- Add rice
- Stir well and reduce heat to a simmer
- Cook the beans in a third pot and mash them
- Chop up the garlic, onion, lettuce, and tomatoes
- When the rice is almost done add the garlic
- Add the corn to the rice
- Drain the quinoa and add to the rice
- Mix well
Directions:
- Layer a plate with either chips or the quinoa-rice mixture
- Add a layer with beans
- Add shredded cheese (optional)
- Add lettuce or kale-spinach blend
- Add diced tomatoes
- Add diced onions
- Add salsa and/or guacamole
- Serve
