
Ingredients:
- 2 sweet potatoes
 - 1/2 cup quinoa
 - 1/2 cup corn
 - 1 cup coarsely chopped spinach or kale
 - 1 tsp curry powder
 - 1/2 tsp cayenne powder
 
Directions:
- Skin the sweet potatoes and bake them at 350 degrees for 45 minutes
 - Pour a cup of water in a small pot and bring to a boil
 - Add quinoa and reduce heat to a simmer for 15 minutes
 - Drain water and set quinoa aside
 - Add sweet potatoes to a bowl and mash them up
 - Add corn and mix well
 - Add the greens and mix well
 - Add the quinoa and mix well
 - Add the curry and cayenne powders and mix well
 - Shape the vegetable mixture into burger-sized patties
 - Place patties in a refrigerator and chill for at least one hour
 - Lightly fry the patties on a pan over medium heat until both sides are crispy
 - Serve on a bun with your favorite condiments
