Ingredients:
- 1 package soft tofu
- 2 cups vegetable broth
- 1/2 cup onion, chopped
- 4 shiitake mushrooms, sliced
- 2 tsps gochujang hot pepper paste
- 1 tsp soy sauce
- dried seaweed (optional)
- Directions:
- Saute onions in a small pot with some olive oil
- Add the mushrooms
- Add the vegetable broth
- Add the soy sauce
- Add the gochujang hot pepper paste
- Add the dried seaweed
- Add the tofu and press into pot, taking care not to crumble the tofu
- Simmer for 20 minutes then serve hot
