Episode 44: Korean Tofu Soup

Ingredients:

  • 1 package soft tofu
  • 2 cups vegetable broth
  • 1/2 cup onion, chopped
  • 4 shiitake mushrooms, sliced
  • 2 tsps gochujang hot pepper paste
  • 1 tsp soy sauce
  • dried seaweed (optional)
  • Directions:
  • Saute onions in a small pot with some olive oil
  • Add the mushrooms
  • Add the vegetable broth
  • Add the soy sauce
  • Add the gochujang hot pepper paste
  • Add the dried seaweed
  • Add the tofu and press into pot, taking care not to crumble the tofu
  • Simmer for 20 minutes then serve hot
