Crust ingredients:
- 1/2 cup pecans
- 1/4 cup unsweetened shredded coconut
- 4 dates
- 1/8 cup water
- 1 teaspoon agave
Special equipment:
- Food processor
- Parchment paper
- Directions:
- Put all the ingredients in a food processor
- Process until you get a sticky mixture you can shape into a ball
- Line a plate with parchment paper
- Flatten the mixture onto the plate
- Make a circle that is about 1/2 inch thick
Filling ingredients:
- 1/2 cup cashews, soaked overnight
- Juice of 1/2 lemon
- 3 tablespoons coconut oil
- 1 teaspoon vanilla extract
- 1 tablespoon agave
Directions:
- Put all ingredients in a food processor
- Process until you get a coarse mixture
- Put the filling on top of the crust
- Smooth evenly with a spoon
- Put the cheesecake in the freezer for 1 hour
Sauce ingredients:
- 1 cup blackberries (may substitute with berries of your choice)
Directions:
- Put the berries in a food processor
- Process until smooth
- Pour sauce on top of cheesecake and serve
