Ingredients:
- 2 &1/4 tsp active dry yeast (equivalent to 1 packet)
- 1 tbsp ground flaxseed
- 1/2 tbsp salt
- 3 tbsp steel-cut oats
- 1 cup flour
- 2 cups whole wheat flour
- 1 & 1/2 cups luekwarm water
- 2 tbsp maple syrup
- Olive oil
Special equipment:
- Stand mixer (optional)
Directions:
- Add yeast to lukewarm water and mix well
- Add ground flaxseed and mix well
- Add maple syrup and mix well
- Combine regular and wheat flours into large bowl
- Add salt
- Add yeast-water mixture
- Mix well and knead until you get a soft dough
- Add a little olive oil to another bowl
- Transfer dough to oiled bowl
- Roll dough around bowl until dough is lightly coated with olive oil
- Cover with plastic wrap and set aside for 2 hours at room temperature
- Put bowl into refrigerator for another 2 hours
- Take dough out of refrigerator and knead for 5 minutes
- Lightly coat baking dish with olive oil
- But dough in the dish and allow it to rise for 30 minutes
- Preheat overn to 425 degrees
- Put skillet or oven-safe pan in rack underneath the rack where you will bake your bread
- Put dough in oven
- Add water to pan underneath dough
- Bake for 25 minutes
- Take bread out of oven and let it rest for 5 minutes
- Serve with your favorite spread
