Ingredients:
- 1 cup spelt
- 1 cup millet
- 1 cup pearled barley
- 1 cup wheat flour
- 1/2 cup black beans
- 1/2 cup red lentils
- 1 tablespoon active-dry yeast
- 1 cup water
- 3/4 teaspoon salt
Special equipment:
- Food chopper
- Small blending device
- Stand mixer
Directions:
- Soak the beans and lentils in water for at least 6 hours
- Grind the barley and millet
- Mix all the ingredients together until you get a dough
- Place the dough in a well-oiled bowl and cover with a damp cloth
- Let the dough rest for one hour
- Shape the dough into a loaf and let it rest for another half hour
- Bake at 350 degrees for 25 minutes
- Let cool on a rack
- Cut into slices and serve with jam or your favorite spread
