Episode 67: Pressure Cooker Chili

Ingredients:

  • 3 cloves garlic, chopped
  • 1/2 onion, chopped
  • 1 can diced tomatoes
  • 1/2 cup black beans, soaked overnight and drained
  • 1/2 cup lentils, soaked overnight and drained
  • 1 bell pepper, chopped
  • 1 cup corn
  • 1 cup textured vegetable protein (TVP)
  • 3 cups vegetable stock
  • 2 talespoons chili powder
  • 1 teaspoon oregano
  • 1 teaspoon cumin
  • 1/4 teaspoon cayenne powder (or more if you want spicier chili)

Special equipment:

  • Digital pressure cooker

Directions:

  • Add all the ingredients to the pressure cooker and mix well
  • Cook on “stew/soup” setting for 30 minutes
  • Serve hot
