Ingredients:
- 3 cloves garlic, chopped
- 1/2 onion, chopped
- 1 can diced tomatoes
- 1/2 cup black beans, soaked overnight and drained
- 1/2 cup lentils, soaked overnight and drained
- 1 bell pepper, chopped
- 1 cup corn
- 1 cup textured vegetable protein (TVP)
- 3 cups vegetable stock
- 2 talespoons chili powder
- 1 teaspoon oregano
- 1 teaspoon cumin
- 1/4 teaspoon cayenne powder (or more if you want spicier chili)
Special equipment:
- Digital pressure cooker
Directions:
- Add all the ingredients to the pressure cooker and mix well
- Cook on “stew/soup” setting for 30 minutes
- Serve hot
