Ingredients:
- 1 cup soybeans
- 10 cups water
Special Equipment:
- Blender
- Cheesecloth
Directions:
- Soak soybeans in 6 cups water for at least 12 hours
- De-shell soybeans by gently rubbing soybean between thumb and index finger
- Rinse soybeans and drain
- Add soybeans to blender
- Add 4 cups water
- Pulse a couple of times
- Strain soybean mixture through a cheesecloth
- Wring cheesecloth
- The pulp (okara) can be saved and used for another recipe
- Bring the soy milk to a boil in a large pot then reduce heat to medium
- Stir constantly for 20 minutes
- Skim the soy milk and allow to cool for 1 hour
- Strain the soy milk through a cheesecloth one more time
