Ingredients:
- 1/4 cup onion, chopped
- 1 potato, chopped
- 1/2 cup stewed tomatoes
- 3 cups spinach
- 2 tablespoons green curry paste
- 1 cup coconut milk
Directions:
- Saute onion in a pan with some olive oil
- When the onions have softened, add the curry paste
- Add the potatoes
- Cook for about 10 minutes until potatoes have softened
- Add the stewed tomatoes
- Add the coconut cream
- Add the spinach
- Reduce heat to a simmer and cook for 10 more minutes
- Serve with rice or bread
