Ingredients:
- 1 cup red lentils, soaked in water overnight and drained
- 1 & 1/2 cups vegetable broth
- 1/2 cup chopped onions
- 1/2 cup chopped carrots
- 1 & 1/4 cups oat flour
- 1 cup dry onion soup mix
- 1 tablespoon wheat gluten
Special equipment:
- Blender
Directions:
- Add lentils and vegetable broth to blender
- Blend until smooth
- Pour into mixing bowl and set aside
- Saute onions in a pan
- Add carrots and saute until tender
- Add onions and carrots to bowl
- Add 1 cup of oat flour
- Add wheat gluten
- Mix well
- Stir in 1 package of dry onion soup mix
- Add 1/4 cup oat flour and mix well
- Pour the mixture into a well-oiled baking dish
- Bake at 375 degrees for 45 minutes
- Take out of the oven and let cool for 15 minutes
